Ingredients:

  • 1 lb boneless skinless chicken breasts trimmed of excess fat
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 24 oz. chicken broth (low sodium)
  • 2 15oz cans great Northern beans drained and rinsed
  • 2 4oz cans diced green chiles (I do one hot, one mild)
  • 1 15oz can whole kernel corn drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Small handful fresh cilantro chopped
  • 4 oz reduced fat cream cheese softened
  • 1/4 cup half and half

Toppings:

  • Sliced jalapenos
  • Sliced avocados
  • Dollop of sour cream
  • Minced fresh cilantro
  • Tortilla strips
  • Shredded Monterey jack or Mexican cheese

Slow Cooker Pulled Pork Chili, recipe provided below (adapted from Slow Cooker Gourmet)

Ingredients

  • 2 pound boneless pork shoulder roast
  • 1 small onion, diced
  • 2 gloves garlic, minced
  • 1 - 2 jalapeno peppers, diced (ribs and seeds removed)
  • 1 (15oz) can pinto beans, drained and rinsed
  • 2 (15oz) cans diced tomatoes
  • 1 (8oz) can tomato sauce
  • 2 teaspoons chili powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried cilantro
  • 8 oz Mexican beer OR chicken broth

Directions

  1. Add all ingredients to slow cooker
  2. Cover and cook on low for 7-9 hours
  3. Remove pork roast and shred with forks
  4. Return to slow cooker and stir to combine
  5. Serve as desired with cheese and sour cream or just plain!

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 large onion, chopped
  • 1 tsp EACH salt, chili powdr, ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 1 15 oz. can kidney beans, rinsed and drained
  • 1  15 oz. can black beans, rinsed and drained
  • 1 4 oz. can mild diced green chilies
  • 1 cup mild salsa *
  • 1 10 oz. can mild enchilada sauce
  • 2 cups low sodium chicken broth 
  • 1 tablespoon cornstarch
  • 4 oz. cream cheese, cubed and softened
  • 1 cup freshly grated sharp cheddar cheese
  • 1 cup freshly grated Pepper Jack cheese
  • Garnish
    • Tortilla chips
    • Fresh cilantro
    • Sour cream
    • Avocado
    • Hot sauce to taste
